Recipe of the Month in August – Mushroom Omelette

Join the riddle in reception this week and you could win the entire ingredients to make this easy recipe.


Handful of Mushrooms (Sliced)
25g Cheddar Cheese (Grated)
2 Eggs (Beaten)
Handful of Parsley (Roughly Chopped)
1 Tbsp Olive Oil


Step 1: Heat the olive oil in a small non-stick frying pan, then tip in the mushrooms and fry over high heat for 2-3 minutes until golden.
Step 2: Lift out of the pan into a bowl and mix with the cheese and parsley.
Step 3: Place the pan back on the heat and swirl the eggs into it. Cook for 1 minute, stirring with a fork now and again.
Step 4: Spoon the mushroom mix over one half of the omelette, then flip the omelette over to cover the mushrooms.
Step 5: Cook for a few moments more, then serve.
