Recipe of the Month in June – Sausages & Pesto Mash

3 Large White Potatoes
4 Pork Sausages
200g Cherry Tomatoes
Half a Jar of Pesto
Olive oil (for frying)


Step 1: Peel and chop your potatoes into quarters, then cook in a large pan of salted, boiling water.
Step 2: After 15 minutes, drain and set aside.
Step 3: Pour a large dash of olive oil into a large frying pan over a medium heat, and cook the sausages for 10 minutes.
Step 4: Add the tomatoes to the pan, and cook together for a further 5 minutes.
Step 5: Mash the potatoes well and mix in the pesto jar. Season, and serve with the sausages and tomatoes.
